I’m not going to lie, I’m impressing myself with the meals lately! Considering I have two mixing bowls, a knife, a cutting board, two oven pans, a frying pan, and two pots… things are basic, but I actually love the simplicity! I never really cooked before moving in with Rasmus! (In the photos I show Rasmus’s plates, they are much prettier than mine!)
Last week for dinner we had:
400g lean beef, 1 egg, 85g defrosted spinach, 100g corn, 70g chopped carrots, 80g quinoa, and some salt/pepper/oregano; mix it all together and you’re all set! Just add some fresh crushed tomatoes with basil!
130g defrosted salmon per person, add ons: mango, avocado, homemade salmon taco sauce (mayonnaise, greek yogurt, cayenne pepper, cumin, oregano, salt, pepper, a little lemon or lime juice! I just estimated the ratios!), ruccula lettuce, add cotija cheese if you can find any, and some taco shells! Voile!
“Grilled Salmon Steaks”
100g fresh salmon per person, boiled potatoes, green beans, add some pesto and top with pine nuts!
“Banana Nut Sweet Potato Protein Bread”
200g banana (two medium/large), 1 egg, dashes of cinnamon and nutmeg, 100g oatmeal, 100g microwaved sweet potato, 80g PeScience Snickerdoodle Protein Powder, topped with hazelnuts! Bake until not gooey in the middle!
This was a treat meal I cooked for my in-laws! Definitely a cheat meal for those dieting (I had a modified version) but it has a lot of good nutrients and happy fats! I modified the linked recipes and all of the ingredients were quite clean (leanest cheeses, coconut oil).
